After some months of use, that works well and led to a 7 days duration.
@Sandlayth is interested to test this feature, but not comfortable with the idea to have to review PHP code.
Situation is stable since August, so we can consider space has been successfully reclaimed.

Not a bug, php-fpm isn't intended to be launched manually without calling the service script, which generates /usr/local/etc/php-fpm-env.conf.
